Corn and Black Bean Salsa
3 cups frozen corn, thawed
2 cans Black Beans, drained
1 red, 1 green pepper finely diced.
Small red onion.
Mix all together with some fresh parsley, salt it.
In Separate Bowl Combine:
1 Cup-Sour Cream
1/2 Cup-Mayonnaise
2 Tbsp- red wine vinegar (or white)
2tsp-Cumin
1tsp-Salt
1/4tsp-Pepper
2tsp-Chili Powder
1/2tsp-Garlic powder
Pour Over Corn Mixture, Gently Toss.
Serve with chili cheese fritos.
Or Eat By Itself.
This is my favorite summer recipe because it's so fresh tasting, easy to make (no need for stove or oven) and it is AMAZINGLY DELICIOUS. I love it and make It often.

cheesy zucchini au gratin. lightly carmalize diced onion in 4 Tbsp butter and 4 garlic cloves, simmer 1 minute, add 1/2 tsp pepper, 1/4 C beef broth and 1/2 C heavy whipping cream, bring to a light boil, stir in sliced zucchini coins. Let boil for 5 minutes, then add 1/2 C shredded parmesan and 1 C mozzarella. Bake on 425 for 12-15 minutes. DELICIOUS !!!!!

Grilled Squash. Slice zucchini and yellow squash length way medium to thin and drip olive oil over both sides. Sprinkle salt and pepper to taste. Generously shake lots of Parmesan cheese over both sides and grill to dark and soft. A simple recipe that satisfy s all.

Crustless Quiche
INGREDIENTS
6 eggs
3 cups milk
1 cup biscuit/baking mix
1 cup butter or margarine, melted
1/4 teaspoon pepper
2 cups cheddar cheese, shredded
DIRECTIONS
1. In a mixing bowl, combine the first 5 ingredients. Beat on low speed for 3 minutes or until blended.
2. Transfer to a large flat casserole dish.
3. Sprinkle with cheese. Lightly press down the cheese on top of the batter.
4. Bake, uncovered, at 350°F for 45 minutes, or until a knife inserted near the center comes out clean.
5. Let stand for 10 minutes before serving.

Don't recall how I came by this recipe however, it's one of my go to warm weather favs. Healthy and easy to make! Enjoy
Classic Alaska Salmon Macaroni Salad
2/3 cup low-fat mayonnaise or salad dressing
1/3 cup plain yogurt
1-1/2 teaspoons lemon pepper seasoning
1 teaspoon each dried onion and dill weed
1 teaspoon lemon juice
1/2 teaspoon salt
1 package (12 oz.) elbow macaroni or small shell pasta
1 can (14.75 oz.) -OR- 2 cans (7.5 oz. each) traditional pack Alaska salmon
-OR- 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked
1 cup diced celery
2 Tablespoons fresh chopped chives or 2 stalks green onions, sliced
Dressing: In small bowl, blend mayonnaise, yogurt, lemon-pepper, dried onion, dill weed, lemon juice, and salt.
Salad: Cook pasta according to package directions until just firm to bite. Drain, rinse in cold water. In large bowl, add pasta, salmon, celery, and chives. Pour dressing over pasta. Stir to blend. Cover and refrigerate several hours to blend flavors.

2 Cucumbers peeled and cut up
1 Pint cherry tomatos sliced in half
1/3 Cup of lemon juice

#AugRecipe2019. My favorite summer recipe is super simple. Take chicken thighs and cover them with McCormick's BBQ spice rub. Leave on for at least one hour along with a squeeze of lemon juice. Cook on medium heat on grill until internal temperature is at 165 degrees. Add trimmed asparagus to grill and drizzle with olive oil and lemon juice. Cook until asparagus is tender. Serve with quinoa or rice and BBQ sauce.
