Blueberry Cream Cheese Pie
2 baked 9 inch pie shells
8 oz cream cheese softened
1 can (14oz) sweetened condensed milk
2 cups blueberries
1/4 cup lemon juice
1 tdp vanilla
1/2 cup sugar
2 Tbs corn starch
1 cup water
1 cup ( or more) crushed blueberries
1 1/2 - 2 cups whole blueberries
Whip cream cheese until fluffy. Slowly add condensed milk, blending well. Add lemon juice and vanilla. Fold in 2 cups of blueberries. Pour into pie shells and chilling refrigerator 2-3 hours or overnight. Combine sugar, corn starch and water in sauce pan. Add crushed blueberries and cook over medium heat until mixture is thick and clear and boils. ( May double this part of the recipe). Stir constantly. Cool. Cover chilled cream cheese mixture with 1 1/2 - 2 cups of whole blueberries and cooled sauce. Refrigerate. Pies freeze well.
I love this recipe because it reminds me of the time I work on a blueberry farm in my teens. I actually got the recipe from the owner and she was quit the cook

Grilled anything!
Grilled chicken thighs
Marinate in beer can chicken rub all day.
Grill bone side down until top of chicken is gold brown then flip and grill for about another 10 minutes.
Charcoals should be a low slow cook .

Grilled Pork Chops with Fresh Nectarine Salsa
ingredients
2 nectarines, pitted and diced
1 ripe tomato, seeded and diced
1/4 cup diced onion
White Onion, Large
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1/4 teaspoon crushed red pepper flakes, or to taste
salt to taste
1 teaspoon ground cumin
1 teaspoon chili powder
salt and ground black pepper to taste
2 tablespoons olive oil
8 (4 ounce) boneless pork loin chops

Preheat an outdoor grill for medium-high heat. Lightly oil grate, and set 4 inches from the heat.
To make the salsa, place the nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl; toss to blend. Season to taste with salt. Cover, and refrigerate 30 minutes to blend flavors.
Stir the cumin, chili powder, salt, and pepper together in a small bowl. Place the olive oil in a small bowl. Brush the pork chops with oil, and season both sides evenly with the cumin mixture.
Place pork loin chops on the preheated grill. Cook until lightly browned and juices run clear, about 4 minutes on each side. Place pork chops on serving plates, and top with a generous spoonful of salsa.

Potato Salad
Ingredients
about 20 potatoes
6 eggs
chopped onion ( amount your comfortable with)
Boil, peal & chop place in bowl
add about 1 1/2 cups of mayo
couple squirts of mustard
add spices
a good dash of celery seed
dash of ground mustard
dash of lemon pepper
dash of thyme
dash of garlic salt
couple dashes of paprika
pepper to taste
Makes an ice cream bucket full & I never have left overs

BBQ Turkey Meatloaf Sandwich
Ingredients
2 lbs. of ground turkey beef (can be replaced with extra lean beef)
½ cup of milk
1/2 cup of diced onions
1/2 diced green pepper
1 cup of dried bread crumb (can replaced with crackers crumbs)
1 egg
½ tsp salt
½ tsp pepper
2 slices of wheat or white bead
½ cup of BBQ sauce(store-bought) (regular, honey, or brown-sugar flavored)
Preheat oven at 350 degrees.
Prep Time: 10min
Cooking Time: About 1hr to 1hr 20 minutes
Ready: About 1hr 10 minutes
In a large bowl, combine the ground turkey beef (ground beef), eggs, onions, green peppers, milk bread or cracker crumbs. Season with salt and pepper taste. Using your hands, mix it lightly until combined.
With vegetable or any cooking oil you like, greased it into any size of loaf pan and put the meatloaf into the pan and form it into a loaf and put it into a lightly greased 9x5 inch baking dish. Spread the BQ sauce over the meatloaf and tent with aluminum foil. The aluminum foil will keep your moist and allows the meatloaf to cook evenly without burning it. Bake until a meat thermometer registers 165 degrees F, about 50 minutes. Remove the foil during the last 10 minutes of cooking. Let the meatloaf stand for 10 minutes before slicing.
Take two slices of bread, bake into the oven or toaster. After it is toasted, add your favorite condiments like slices of lettuce, and tomatoes to one bread, place a slice of meatloaf that cut and put it on the lettuce or tomatoes. Add 2 slices of cheese on top of the meatloaf and top it with the other bread. You can eat the sandwich with your homemade fries, mashed potatoes, steamed vegetables, or potatoes chips. If you want to drink, I would suggest drinking cold lemonade, tea, or soda drinks.
