What is the most underrated seasoning in your spice cabinet?

Maybe it's the cooking shows that I've been watching, but now I cannot cook meat without using thyme. I'm an OK cook but have found that adding a little bit of seasoning to my dishes brings them to a whole new level. What seasoning have you recently 'discovered?'

I am one of those people who follows every recipe exactly, so there is no adding of anything to my recipes! I have started using fresh rosemary from our garden instead of the dried rosemary you buy in the store. It tastes so much better. But I only use it if the recipe calls for rosemary!

I don't Know, probably all of them since I do not use them very often. My children like to experiment though.

Turmeric for it's health qualities. Cinnamon is also good for you.

Mostly I use pepper, onion powder and paprika. These add flavour to any dish.

Tumeric is underrated! Don't like curry but don't want to lose your memory when you age? Tumeric is the key! With little flavour this spice that gives curry its yellow colour is a power house for brain health!
